Grancys Mashed Potato Casserole


With all the hustle and bustle around the holiday meals, I have found that recipes that I can assemble ahead of time and keep in the refrigerator until meal time help make life easier!  One that I would like to share with you is a scrumptious Mashed Potato Casserole which I received from my dear friend, Nancy Lou! Nancy and I have been the best of friends since Kindergarten and I have always loved her cooking!


8-10 boiled potatoes

1 stick butter 

1 whipped cream cheese with chives
garlic salt  and seasoned pepper
1 low fat sour cream (small container)
Whip the potatos, butter, cream cheese, seasonings together.  Add the sour cream last. Place into buttered casserole dish.
Refrigerate.  When preparing your meal, place the casserole in the oven at 350 degrees and cook for 40 minutes or until warmed through.
