BLT Soup


  • 4 slices smoked bacon
  • 1 tablespoon butter
  • ½ cup chopped onion
  • ½ cup chopped green bell pepper
  • ½ cup chopped celery
  • 2 minced garlic cloves
  • 1 quart chicken broth
  • 1 medium tomato, diced
  • ½ cup cream
  • ¼ cup croutons for garnish, optional
  • 2 cups shredded romaine or arugula


Fry bacon crisp and crumble it when cool; set aside. In a soup pot, melt the butter and saute the onions, green pepper, celery, and garlic over medium heat until tender. Add the chicken broth and bring to a boil. Lower heat and simmer for 10 minutes. Just before serving, add the tomato,arugula, bacon, and cream. Mix well and season to taste. Heat gently and serve, topped with croutons if you like.
